Sillbullar (Herrings Croquettes)

Ingredients :

  • 2 salt herrings
  • 1 1/2 lbs. of cold cooked potatoes
  • 1 1/2 cups of cooked meat
  • 1 cup of milk
  • 1 cup of brown breadcrumbs
  • 3 tablespoons of butter
  • 1/2 teaspoon of white pepper
  • lard for frying

Method :
  1. Soak the herrings in cold water overnight.
  2. Dry, skin, and bone them.
  3. Chopped very fine, as well as the potatoes, add the chopped meat, the milk, and season with pepper.
  4. Shape into round croquettes, roll in brown breadcrumbs and fry to a golden brown in hot lard.
  5. Serve with CURRANT SAUCE.
