Ingredients :
- 2 salt herrings
- 1 1/2 lbs. of cold cooked potatoes
- 1 1/2 cups of cooked meat
- 1 cup of milk
- 1 cup of brown breadcrumbs
- 3 tablespoons of butter
- 1/2 teaspoon of white pepper
- lard for frying
Method :
- Soak the herrings in cold water overnight.
- Dry, skin, and bone them.
- Chopped very fine, as well as the potatoes, add the chopped meat, the milk, and season with pepper.
- Shape into round croquettes, roll in brown breadcrumbs and fry to a golden brown in hot lard.
- Serve with CURRANT SAUCE.
