Frikadeller (Meat Croquettes)

These are always served with the foregoing cabbage soup. For this the ingredients required are :

  • 1/4 lb. of minced beef
  • 2 tablespoons of butter
  • 1 tablespoon of breadcrumbs
  • 1/2 cup of milk
  • 1 teaspoon of potato flour
  • 2 teaspoons of salt
  • 1/2 teaspoon of pepper

Method :
  1. Put the beef three times through the grinder, mix with the butter, breadcrumbs, potato flour, and the milk, and season with salt and pepper.
  2. The mixture should be quite smooth.
  3. Shape into very small balls, and boil in salted water for about 10 minutes.
