Kalvkyckling (Veal A'la Suedoise)

Ingredients : (For 6 People)

  • 3 lbs. of fillet of veal
  • 1/2 cup of cream
  • 3 tablespoons of butter
  • parsley
  • salt
  • pepper

Method :
  1. Cut the fillet into slices and flatten these.
  2. Season with salt and pepper.
  3. Chop the parsley coarsely and work with 2 tablespoons of butter.
  4. Divide this into as many pats of butter as there are slices of meat.
  5. Put one on each slice, roll the meat around it and tie.
  6. Brown the meat in butter, then add stock or water, but not enough to cover, and simmer till the meat is tender.
  7. Remove the string, put the rolled slices on a hot dish, strain the sauce in the pan, mix it with the cream, and pour over the meat.
