Poffertjes (Fritters)

These delicious little fritters are one of the features at Dutch fairs, and are eaten piping hot, with melted butter and sugar.

Ingredients :

  • 1/2 lb. of flour
  • 4 tablespoons of butter
  • 1/2 oz. or a little less of yeast
  • just over 1/2 pint of warm milk
  • 1 teaspoon of sugar or 2 tablespoons of syrup
  • a pinch of salt

Method :
  1. Dissolved the yeast in the warm milk, and make a dough with the flour, the sugar or syrup, and the salt.
  2. Warm the small cake pans--pour a little melted buuter in each, and half fill each with the mixture.
  3. Bake in a quick oven and serve with butter and sugar.
