Oliebollen (Fried Dumplings)

This another typically Dutch sweet.

Ingredients :

  • 1/2 lb. of flour
  • 1/2 oz. of yeast
  • just under 1/2 pint of lukewarm milk
  • 1/3 cup of raisins
  • 1/3 cup of currants
  • 1 oz. of candied lemon peel
  • 1 chopped apple
  • the juice of 1/2 a lemon
  • a pinch of salt

Method :
  1. Make a stiff dough with the ingredients, mixing in the yeast, previously dissolved in a little warm milk.
  2. Work well, shape into a ball, cover and set to rise for 1 hour.
  3. Have ready an iron pot with hot oil, drop in 2 teaspoons of the mixture at a time, and cook for a few minutes to a light brown.
  4. drain and sprinkle with sugar.
