Flensjes (Thin Pancakes)

Ingredients :

  • 1 1/4 cups of flour
  • 1/2 pint of milk
  • 2 eggs
  • a pinch of salt
  • 3 tablespoons of butter or 3 tablespoons of salad oil

Method :
  1. Break the eggs in a bowl, stir, add the salt, the flour, and 6 tablespoons of milk.
  2. Beat well with a whisk till the batter is quite smooth and light.
  3. Add the remaining milk gradually.
  4. Warm a little butter in the pancake pan, and drop in a small quantity of the mixture, so as to make a very thin pancake.
  5. Cook to a light color on both sides.
  6. These are either filled with jam or with brown sugar.
