HERINGE IN RAHMSAUCE (Herrings in Cream Sauce)

Ingredients :

  • A few fillets of fresh herrings
  • 6 or 8 tablespoons of sour cream
  • a few boned anchovies
  • butter
  • brown breadcrumbs
  • salt
  • pepper

Method :
  1. The fillets of herrings are put in a buttered fireproof dish with the sour cream, then sprinkle with breadcrumbs, well seasoned with salt and pepper, and garnished with anchovies (in oil) and a few pats of butter on the top.
  2. Put in a moderate oven and cook for 20 - 30 minutes, till the fish is quite tender.
