Fiskfars (Mousse Of Fish)

Ingredients ;

  • 2 1/2 lbs. of fresh haddock
  • 1 1/4 cups of butter
  • 1/2 cups of flour
  • 1/2 cup of cream
  • 4 eggs
  • 1 tablespoon of salt
  • 1/2 teaspoon of pepper
  • a little sugar

Method :
  1. Wash and dry the fish and remove skin and bones.
  2. Put the fish and butter through the grinder three times, and afterward pound in a mortar to a perfectly smooth, creamy paste.
  3. Mix the yolks of egg in a bowl with half the cream, adding the flour, salt, pepper, and sugar.
  4. Then mix in alternately the fish mixture and the cream, and work for about 1 hour.
  5. Add finally the stiffly beaten whites of egg and pour the mixture into a buttered pie dish with breadcrumbs.
  6. the pie dish should be placed in boiling water and the mixture steamed for about 1 hour.
  7. It is served with either LOBSTER SAUCE or MUSHROOMS SAUCE.
