Ingredients ;
- 2 1/2 lbs. of fresh haddock
- 1 1/4 cups of butter
- 1/2 cups of flour
- 1/2 cup of cream
- 4 eggs
- 1 tablespoon of salt
- 1/2 teaspoon of pepper
- a little sugar
Method :
- Wash and dry the fish and remove skin and bones.
- Put the fish and butter through the grinder three times, and afterward pound in a mortar to a perfectly smooth, creamy paste.
- Mix the yolks of egg in a bowl with half the cream, adding the flour, salt, pepper, and sugar.
- Then mix in alternately the fish mixture and the cream, and work for about 1 hour.
- Add finally the stiffly beaten whites of egg and pour the mixture into a buttered pie dish with breadcrumbs.
- the pie dish should be placed in boiling water and the mixture steamed for about 1 hour.
- It is served with either LOBSTER SAUCE or MUSHROOMS SAUCE.
