Anjovislada (Anchovy Omelet)

The word "omelet" is not used in the same sense as it is commonly used by the French and English, and I should be more inclined to describe this dish as "baked anchovies".

Ingredients :

  • 15 anchovies
  • 4 cooked potatoes
  • 2 tablespoons of butter
  • 1 tablespoon of chopped parsley
  • 2 tablespoons of brown breadcrumbs

Method :
  1. Butter a pie dish and sprinkle with breadcrumbs.
  2. Arrange in dihs alternate layers of sliced potatoes and anchovies, previously cleaned, finishing with a layer of potatoes.
  3. Sprinkle the top with breadcrumbs and parsley, dot with pats of butter and brown in a moderate oven.
