The word "omelet" is not used in the same sense as it is commonly used by the French and English, and I should be more inclined to describe this dish as "baked anchovies".
Ingredients :
- 15 anchovies
- 4 cooked potatoes
- 2 tablespoons of butter
- 1 tablespoon of chopped parsley
- 2 tablespoons of brown breadcrumbs
Method :
- Butter a pie dish and sprinkle with breadcrumbs.
- Arrange in dihs alternate layers of sliced potatoes and anchovies, previously cleaned, finishing with a layer of potatoes.
- Sprinkle the top with breadcrumbs and parsley, dot with pats of butter and brown in a moderate oven.
