Ingredients :
- 2 cups flour
- 1/3 cup baking cocoa
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cups shredded zucchini
- 1 1/2 cups sugar
- 3/4 cup vegetable oil
- 1/2 cup chopped walnuts
- 2 teaspoons vanilla extract
- 1/4 cup butter or margarine
- 1 cup sugar
- 1/4 cup milk
- 1/2 cup semisweet chocolate chips
- 1/2 cup miniature marshmallows
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts -- optional
Directions :
- In a bowl, combine flour, cocoa, baking soda and salt.
- Combine zucchini, sugar and oil.
- Add to dry ingredients.
- Mix well. Stir in walnuts and vanilla.
- Pour into a greased 13x9" baking pan.
- Bake at 350 degrees for 35-40 minutes or until a toothpick comes out clean.
- Cool on a wire rack for 30 minutes.
- In a saucepan, melt butter.
- Stir in sugar and milk.
- Bring to a boil over medium heat, stirring frequently.
- Boil and stir 1 min.
- Remove from heat.
- Stir in chips and marshmallows until melted.
- Add vanilla.
- Spread over brownies.
- Sprinkle with walnuts if desired.
