Decadent Cherry Bread

Ingredients : (Makes 1 loaf)

  • 1 (16 oz) package date quick-bread mix
  • 1 (10 oz) jar maraschino cherries, drained and halved
  • 1 cup chocolate chips
  • 3/4 cup water
  • 1/4 cup cherry-flavored liqueur or extract
  • 2 eggs
  • 1 Tbsp oil
  • Melted chocolate or confectioners' sugar

Directions :
  1. Preheat oven to 350 degrees.
  2. Spray an 8 x 4-inch or 9 x 5-inch loaf pan with nonstick cooking spray.
  3. In large bowl, combine bread mix, cherries, chocolate chips, water, liqueur, eggs and oil.
  4. Pour into prepared pan.
  5. Bake 80 minutes or until bread tests done in center.
  6. Cool 15 minutes.
  7. Remove from pan; cool 1 hour.
  8. Drizzle with chocolate or sprinkle with confectioners' sugar.
  9. Wrap lightly in plastic wrap or foil.
  10. Refrigerate 24 hours.
  11. Store in refrigerator up to 2 weeks or in freezer up to 3 months.
