Banana Bread

Ingredients :

  • 5 very ripe bananas
  • 4 eggs
  • 1 cup shortening
  • 2 1/2 cups sugar
  • 1 T vanilla extract
  • 3 1/2 cups all-purpose flour
  • 2 tsps baking soda
  • 1 tsp salt
Directions :
  1. Preheat oven to 300 degrees. Grease 2 9x5-inch loaf pans.
  2. In a medium bowl, mash bananas and stir in the eggs until well blended.
  3. Set aside.
  4. In a large bowl, beat shortening and gradually add the sugar.
  5. Stir in vanilla and banana mixture.
  6. Whisk together flour, baking soda and salt; blend into batter.
  7. Add walnuts if desired.
  8. Divide between the two prepared pans.
  9. Bake for 1 hour 15 minutes in the preheated oven, or until a toothpick inserted in the center of the loaf comes out clean.
