Vischkoekjes (Fish Cakes)

Although these fish cakes are made in more or less the same manner in all Europen countries, they are so popular in Holland and considered to be a national dish by Dutchmen that I think it advisable to include the Dutch recipes for them. They are made with :

  • 6 ozs. of cooked fish
  • 2 ozs. of bread
  • 1 egg
  • 1/2 pint of milk
  • 5 tablespoons of butter
  • chopped parsley
  • salt
  • pepper
  • nutmeg

Method :
The fish is chopped and mixed with the other ingredients, shaped into rissoles and fried in butter.
