Gezouten Haring (Salt Herrings Or Bloaters)

Remove the heads from the bloaters, open the fish, and remove the bones. Flatten, season with salt and pepper, sprinkle with flour, and fry in clarified butter. This is served with either red cabbage or a puree of apples and potatoes.
