Gevulde Kool (Stuffed Cabbage)

Ingredients :

  • 1 savoy cabbage
  • 1 1/2 cups of minced pork
  • 6 ozs. of minced beef or veal
  • 3 thin slices of bread
  • 3 tablespoons of butter
  • salt
  • pepper
  • nutmeg

Method :
  1. Remove the outer leaves from the cabbage and blanch in boiling salted water for 15 minutes.
  2. Drain thoroughly and put a few on a clean cloth.
  3. Mix the minced pork and beef or veal with the previously soaked bread and season with salt, pepper, and nutmeg.
  4. Put a thin layer of the minced meat over the cabbage leaves, cover with more cabbage leaves, and continue the process till all the leaves and the minced meat have been used up.
  5. Gather the four ends of the cloth and tie up.
  6. Boil in salted water for 1 1/2 hours.
  7. Remove the cabbage from the cloth, place it in a fireproof dish, well buttered, dot with pats of butter, and put in a quick oven.
  8. When a light brown remove from the oven and serve.
