ZUCCHINI BUTTERMILK CAKE

MAKES 16 SERVINGS


Ingredients :

  • 1 box devils food cake mix
  • 3/4 cup pasteurized egg substitute
  • 1/2 cup each buttermilk and corn oil
  • 1 1/2 cups shredded zucchini
  • 1 cup raisin and dried cherry blend, chopped
  • 2 pkgs 1 oz each sugar free fat free white chocolate instant pudding
  • 8 oz container frozen whipped topping, thawed
  • 1 orange, zested and juiced
  • 1 pint strawberries

Directions :
  1. Heat oven to 375 degrees.
  2. In bowl, blend first 4 ingredients 30 seconds, then beat 2 more min.
  3. Fold in next 2 ingredients.
  4. Pour into 3 greased round pans.
  5. Bake 20 min. or until done.
  6. Cool.
  7. Prepare pudding according to package directions, using 2 cups milk total.
  8. Fold in 2 cups whipped topping and 1 tbs orange zest.
  9. Spoon mixture into piping bag fitted with star tip.
  10. Halve 5 strawberries, hull and slice remaining berries.
  11. Place one cake layer on platter, pipe on 1 cup pudding mixture.
  12. Top with 1/2 cup sliced berries.
  13. Repeat layering with remaining cake layers, pudding mixture and sliced berries.
  14. Top with remaining whipped topping, sliced oranges and halved berries.
  15. Garnish with mint and chocolate leaves if desired.
