Cranberry Bread

Ingredients :

  • 1 cup sugar
  • 1 tablespoon grated orange peel
  • 3/4 cup water
  • 1/3 cup orange juice
  • 2 tablespoons oil
  • 1 egg
  • 2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup halved fresh or frozen whole cranberries -- (do not thaw)
  • 1 cup chopped nuts
Directions :
  1. Heat oven to 350°.
  2. Grease 9x5-inch loaf pan.
  3. In large bowl, combine sugar, orange peel, water, orange juice, oil and egg; blend well.
  4. Lightly spoon flour into measuring cup; level off.
  5. Add flour, baking powder, salt and baking soda; stir just until moistened.
  6. Stir in cranberries and nuts.
  7. Pour into greased pan.
  8. Bake at 350° for 50 to 60 minutes or until toothpick inserted in center comes out clean.
  9. Cool 10 minutes; remove from pan.
  10. Cool completely.
  11. Wrap tightly and store in refrigerator.
