- 1 c sugar (or 1 c Splenda)
- 4 T cocoa (level)
- 4 T flour (level)
- yolks of 3 large eggs (I used ex-large)
- 1¼ stick oleo or butter (2T)
- 1¼ c milk (would of used skim if I'd had it)
- 1t vanilla
Directions :
- Combine sugar, flour, cocoa, and ¼ c milk.
- Mix well, add egg yolks, remaining milk. oleo, vanilla, cook until thick. (I use a double boiler).
- Pour into a cooked pie shell.
- Beat the 3 egg whites until stiff, add ¼ t vanilla and 2½ t of sugar (Splenda).
- Spread on top of filling.
- Bake until brown.
- It seems to not be quiet as chocolate-y as the original and the meringue isn't as sweet, but it's been a couple years since I had actually made the original so it might just be my taste buds.
- In any case, it's good and nothing in it a diabetic can't have.
- Of course, a diabetic shouldn't eat the whole thing in a day's time like I did, minus 2 small pieces.
- It's not carb free but it's worth cheating a little for.
