Blueberry Quick Bread

Ingredients : (Makes 1 loaf)

  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 tbsp butter
  • 3/4 cup chopped walnuts
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1 1/2 cup blueberries

Directions :
  1. Preheat the oven to 350 F.
  2. Grease and flour a 9 x 5 loaf pan.
  3. In a large bowl, with a fork, mix the flour, sugar, baking powder, and salt.
  4. Using a pastry blender or 2 knives used in scisson-fashion, cut in the butter until the mixture resembles fine crumbs.
  5. Stir in the walnuts.
  6. In a small bowl, with a fork, beat the eggs slightly.
  7. Stir in the milk and vanilla.
  8. Stir the egg mixture into the flour mixture just until the flour is moistened.
  9. Gently stir the blueberries into the batter.
  10. Spoon evenly into the prepared pan.
  11. Bake for 1 hour and 20 minutes or until a toothpick inserted into the center comes out clean. Cool the bread in the pan on a wire rack for 10 minutes.
  12. Remove from the pan.
