Ingredients : (Makes 1 loaf)
- 2 1/2 cups flour
- 3/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 6 tbsp butter
- 3/4 cup chopped walnuts
- 2 eggs
- 1 cup milk
- 1 tsp vanilla
- 1 1/2 cup blueberries
Directions :
- Preheat the oven to 350 F.
- Grease and flour a 9 x 5 loaf pan.
- In a large bowl, with a fork, mix the flour, sugar, baking powder, and salt.
- Using a pastry blender or 2 knives used in scisson-fashion, cut in the butter until the mixture resembles fine crumbs.
- Stir in the walnuts.
- In a small bowl, with a fork, beat the eggs slightly.
- Stir in the milk and vanilla.
- Stir the egg mixture into the flour mixture just until the flour is moistened.
- Gently stir the blueberries into the batter.
- Spoon evenly into the prepared pan.
- Bake for 1 hour and 20 minutes or until a toothpick inserted into the center comes out clean. Cool the bread in the pan on a wire rack for 10 minutes.
- Remove from the pan.
